So this weekend we will be whizzing up a batch of these delicious, Sweet Potato Pancakes. Sweet potatoes are high in vitamin B6 and vitamin C and vitamin D, plus they’re a great source of iron and potassium. Why not try this super easy recipe this weekend; it takes just 5 minutes to prepare, is gluten, wheat and dairy free, plus it’s suitable for vegetarians.

Ingredients:

  • 100g Potato, Sweet
  • 1 Organic Free Range Eggs (Box)
  • 20g Organic Extra Virgin Coconut Oil, The Coconut Company
  • 20ml Agave Dark Syrup, Biona
  • 80g Buckwheat Flour
  • 10g Baking Powder
  • 225ml Almond milk

Preparation:

Mix all the ingredients together in a blender; the consistency should be just thicker than cream.

Heat a non-stick frying pan over a medium heat and add a little Lucy Bee Coconut Oil.

Pour small amounts of the batter into the pan, about four at a time and cook for about 2 to 3 minutes and turn over.

Serve with yoghurt, agave and fresh bananas.
