Lagar del Soto is the superior category of extra virgin olive oil made from olives from olive trees registered as organic producers in the area.
Limited production, these extra virgin olive oils are made from organic Manzanilla Cacereña olives.
Our traditional and rain-fed crops are located in a privileged environment, with a mild climate and protected as “Red Natura 2000”.
This unique landscape provides the Extra Virgin Olive Oil El Lagar de Soto Clásico with surprising organoleptic and chemical characteristics with an inimitable flavor.

Elaboration
Cold made from the first extraction.

Colour
Gold color with green reflections. Frank.

Smell
On the nose, intense fruitiness of green olives, fruitiness of fruit salad, green apple, green grass, green almond, tomato, green wood, banana, nettle.

Taste
In the mouth, sweet of medium intensity, spicier and slightly bitter.

Acidity
Maximum acidity content 0.5º.

El Lagar del Soto Clásico Ecológico has a percentage higher than 77% of oleic acid, being one of the highest of the different types of olive oils on the market.

This oleic acid content, in addition to the well-known cardiovascular prevention effect, can help prevent various types of cancer, along with a healthy lifestyle.

The Lagar del Soto Clásico Ecológico has a polyphenol content greater than 400 mg / liter; of the highest of the Spanish varieties.

With this amount, beneficial metabolic effects on plasma lipids and oxidative stress in human plasma have been demonstrated, in addition to adding the effects in terms of prevention of cancer, cardiovascular diseases and neurodegenerative diseases.
