Roast Beet and Orange Salad

Ingredients:

  • 12 small Organic Beetroot
  • 3 Organic Orange
  • 120g baby leaves Organic Rocket, Local (Arugula)

Preparation:

Preheat oven - 180?C. Place beetroot in a baking dish with grated orange rind, pierced garlic cloves and drizzle with olive oil. Bake for 35-40 min or until tender. Take your oranges and remove skin. Holding over a bowl to catch the juice, cut along white membranes to remove segments. Divide rocket, beetroot & orange among plates, reserving garlic. Sprinkle goats cheese. Add juice and remaining oil to baking dish & stir to combine. Drizzle over salad. Serve with reserved garlic.
