Broccoli and Bean Salad

Ingredients:

  • 300g cut into small florets Organic Broccoli

Preparation:

Place broccoli and beans into a bamboo steamer. Place steamer over a large saucepan of boiling water. Cook, covered, for 3 to 4 minutes or until tender. Combine ricotta cheese and lemon juice in a small bowl. Season with salt and pepper. Transfer all of the vegetables into a large bowl. Top with almonds and serve with ricotta mixture.
