Chilled Gazpacho

Ingredients:

  • 3 lbs Tomato, Beef
  • 1 red Capsicum Large, Mixed Colours

Preparation:

In a bowl place 1 cup of day old crusty bread (cut into cubes) & soak with 1 tablespoon of vinegar, 2 cloves minced garlic, 4 tbsp of extra virgin olive oil. Mix and let sit for 30 mins. Wash & cube 3lbs tomatoes. Cube 1 cucumber & 1 red pepper. Set aside. In a food processor, blend together into a soup like consistency the 2 mixutures. Place in fridge for an hour to chill. Garnish with cubed cucumbers,peppers,tomato and a few bread croutons and don?t forget the icecube.
