Easy Fish Pie

Ingredients:

  • 1 Onion, White
  • 1/4 cup Herb, Parsley
  • 1/2 Chilli, Red
  • 2 tins Wild Alaskan Pink Salmon, Fish 4 Ever

Preparation:

Preheat the oven to 200?C. Chop the sweet potato into chunks and boil for about 10 mins or until tender. Set aside. Peel and grate the carrot and combine with the zest from the lemon and chopped parsley. Add the tuna and salmon and squeeze over the juice of the lemon and drizzle with rapeseed oil and season. Mix everything together really well. Mash the sweet potato with 1 tbsp of rapeseed oil and season. Spread evenly over the top of the fish and bake for 20 minutes. Sprinkle cheddar cheese over the top if desired.
