Pumpkin and Lentil Salad

Ingredients:

  • 1 Organic Lettuce, Romaine
  • 200g Organic Tomato, Beef

Preparation:

Preheat oven to 180?C. Place the pumpkin in a baking dish and drizzle with olive oil. Season. Add the onion to the pumpkin and roast for 10 minutes. Place the lettuce, lentils and tomato in a large bowl. Add the pumpkin and onion, and toss to combine. Divide among serving bowls. Top with the ricotta and drizzle over the dressing to serve.
