Whole Wheat Banana Nut Bread

Ingredients:

  • 3 Very Ripe Banana
  • 1 Cup Organic Buckwheat Flour, Bob's Red Mill
  • 1 Cup All Purpose Baking Flour, Gluten Free, Bob's Red Mill
  • 1 Tbsp Baobab Powder, Ripe
  • 1 Tsp Baking Soda, Bob's Red Mill
  • 1 Tsp Cinnamon Powder Fairtrade, Steenbergs
  • 1 Cup chopped Organic Walnuts Shelled In Halves, Organik
  • 1 Tbsp Coconut Sugar, Ripe
  • 3 Eggs
  • 1/2 Cup Brown Sugar
  • 1/3 Cup Apple Sauce
  • 1 Tsp Vanilla Extract
  • 1 Tsp Salt
  • 1 Tbsp Rolled Oats

Preparation:

  1. Preheat oven to 350 Degrees.
  2. Grease a loaf pan and set aside.
  3. You can use cooking spray, or some coconut oil.
  4. In a large bowl mix together whole wheat flour, all purpose flour, salt, baking powder, baking soda, cinnamon and pecans, Set aside.
  5. In another large bowl mash the bananas.
  6. Add eggs, vanilla extract, brown sugar and applesauce.
  7. Whisk everything together well.
  8. Add the dry ingredients to the wet ingredients and using a spatula mix everything until well incorporated.
  9. Pour the mixture into the greased loaf pan and if preferred sprinkle with the rolled oats and coconut sugar.
  10. Bake for 50 minutes, or until a toothpick is installed and comes out clean.
