Caramelised Onion Salad

Ingredients:

  • 2 thinly sliced large Onion, Yellow
  • 120g Spinach, Baby 200g
  • 1 chopped large Capsicum Large, Mixed Colours

Preparation:

Melt butter in a large frying pan. Cook onion, stirring occasionally, until soft and translucent. Add sugar and half the vinegar. Cook until thick and caramelised. Transfer to a bowl. Place spinach, capsicum, oil and remaining vinegar in a bowl. Season with pepper. Toss to combine. Top with onion mixture and feta.
