Caramelised Onion Salad
- 2 thinly sliced large Organic Onion Yellow
- 120g Organic Baby Spinach
- 1 chopped large Organic Capsicum Large, Mixed Colours
Preparation:Melt butter in a large frying pan. Cook onion, stirring occasionally, until soft and translucent. Add sugar and half the vinegar. Cook until thick and caramelised. Transfer to a bowl. Place spinach, capsicum, oil and remaining vinegar in a bowl. Season with pepper. Toss to combine. Top with onion mixture and feta.
