Carrot Tomato & Coconut Soup

A wholesome and nutritious soup.

Ingredients:

  • 1 Onion, White
  • 1 tin Tomato, Plum
  • 1 clove Garlic

Preparation:

Heat a drizzle of rapeseed oil in a large pot, add onions and the garlic and turmeric and saut? until soft. Add carrots and tomatoes and cook for a minute while stirring. Now add water, sea salt and pepper, cover and let simmer for 15-20 minutes until the carrots are tender. Use a hand blender to puree until smooth and then stir in the coconut milk.
