Courgette and Mozzarella Salad
Ingredients:
- Grated zest and juice of 1 large Organic Lemon
- Handful fresh leaves of Organic Herb, Mint
Preparation:
Put couscous in a small bowl and add 75ml boiling water, set aside. Put the courgettes on a plate, sprinkle over 1 teaspoon sea salt and leave for 10 minutes. Dry with kitchen paper, then sprinkle with the rosemary, lemon zest and 1 tbs of oil. Pan cook the courgettes for 2-3 minutes each side, until golden over medium heat. Whisk together the lemon juice, 2-3 tablespoons of the olive oil, cumin seeds and pepper. Toss together feta, watercress, mint, courgettes and dressing. Sprinkle over the couscous and serve.Serves:
