Cucumber and Radish Salad

Ingredients:

• 4 Organic Cucumber
• 2 bunches of Organic Rocket, Local (Arugula)

Preparation:

Use a vegetable peeler to peel the cucumber lengthways into ribbons. Transfer to a large serving bowl. Add the radish and rocket, and toss to combine. Whisk the oil, vinegar, mustard and sugar in a small jug until well combined. Drizzle the dressing over the salad.
