Grilled Sweet Potato Salad


  • 4 Organic Potato, Sweet
  • tbsp Extra Virgin Olive Oil, Oro Del Desierto
  • 1 Organic Capsicum Red
  • 1 Organic Herb, Coriander
  • 1 Organic Avocado
  • 1 Organic Limes


In a large bowl, toss the sweet potato slices with olive oil. Season with salt and pepper. Place the sweet potatoes on a grill over medium heat. Cook for about 8-10 minutes on each side. Cut the sweet potatoes into cubes and place in a large bowl.

Add the sweetcorn, red pepper, spring onions, coriander and avocado. Squeeze the lime juice over the salad and stir until combined. Season with salt and pepper, to taste. Serve.
