Honey Mustard Glazed Carrots

Sweet and zingy glazed carrots


  • 3 bunches Carrot
  • 2 tbsps Coconut Oil, Lucy Bee
  • 2 tbsps Local Honey 500g, Ripe
  • 1 tbsp Mustard Dijon, Biona
  • 1 clove Garlic
  • 1 bunch Herb, Rosemary


Preheat your over to 250 degrees c. Cut the carrots in half, lengthways and place them in a large mixing bowl. In a separate bowl, mix coconut oil, garlic, rosemary, mustard, honey, salt and pepper. Pour over the carrots and then place in a single layer on a baking tray. Place in the oven and bake for 20-25 minutes, turning once or twice, until the carrots are tender and have taken a nice golden colour.
