Stuffed Capsicums


  • 2 large Organic Capsicum Large, Mixed Colours
  • Brown Organic Onion, Red
  • 5g chopped & pitted RIPE ORGANIC KHALAS DATES 500g
  • .5 tsp ground Organic Ginger
  • /3 cup chopped Organic Herb, Parsley


Preheat oven 220?C. Brush capsicums with 1 tsp of oil. Place, cut-side up, in foil lined roasting pan. Roast for 10 mins until tender. Meanwhile, place couscous in a bowl and pour in boiling water, stir with a fork. Cover, set aside for 5 until liquid is absorbed. Fluff with fork. Heat remaining oil in a non-stick frying pan over high heat. Cook onion until brown. Reduce heat to med, add couscous, chickpeas (300g canned chickpeas), dates, ginger, 1/4 tsp cayenne pepper & salt. Cook, stirring, for 2-3 mins until combined. Add parsley. Remove capsicum from oven. Spoon couscous mixture into each half. Bake for 12-15 minutes or until brown. Serve with
