Chargrilled Haloumi Salad


  • 2 red Organic Capsicum Large, Mixed Colours
  • 4 green Organic Zucchini, Green
  • 1/4 cup Organic Herb, Parsley


Preheat large chargrill. Cook capsicum, skin-side down for 5 min. Transfer to bowl, cover with plastic wrap for 5 min. Peel skin from capsicum. Thinly slice. Add zucchini to grill for 2 mins each side. Transfer to bowl with capsicum. Add haloumi to grill and cook until brown. Combine oil, lemon juice, mustard, garlic & thyme. Drizzle over the zucchini mix & toss. Add the haloumi and toss. Arrange mixture on a serving plate and sprinkle parsley and capers.
