Chicken, Radish and Potato Salad
Ingredients:
- 2 springs Organic Herb, Parsley
- 400g Organic Potato
- 4 sticks Organic Celery
Preparation:
Place water, onion, parsley, peppercorns and salt into a large saucepan to boil. Add chicken and cover. Remove from heat for 30 minutes to poach. Remove chicken and set aside to cool. Place potatoes in a steamer over boiling water. Steam until tender, place into cold water and drain. Set aside to cool. Cut into slices. Combine yoghurt, lemon juice, chives and hot water in a bowl. Place potatoes, chicken, celery, radish slices and yoghurt dressing in a large bowl and gently toss to coat. Serve on top of watercress.Serves:
