Festive Cous Cous

Ingredients:

  • 2 1/2 Cups White Couscous, Infinity Foods
  • 1 Juiced Lemon
  • 1/2 Peas, Fresh
  • 1 finely Chopped Small Onion, Red
  • 75g Pomegranate
  • 1/4 cup Chopped Almonds, Ripe
  • 1/3 Chopped Flat leaf Herb, Parsley
  • 2 tbs Chopped Herb, Mint
  • 4 Cups Chicken Bone Broth

Preparation:

Place the couscous in a large mixing bowl. Stir in hot bone broth, oil, and lemon juice and set aside for 10 minutes or until the couscous is fluffy. Toss through the remaining items and serve.
