Garlic Smashed Sweet Potatoes
- 4 Organic Potato, Sweet
- 3 tbs Coconut Ghee, Ripe
- 4 crushed cloves of Organic Garlic
- 1 tbsp chopped Organic Herb, Parsley
- 1 tbsp Organic Herb, Rosemary
- Grated Parmesan Cheese (optional)
Bake the sweet potato at 180oC until soft. Cut into 2-inch slices and press gently with a fork. Drizzle the garlic coconut ghee and sprinkle with rosemary and parmesan cheese if you desire. Bake for another 15 minutes.
