Garlic Smashed Sweet Potatoes


  • 4 Potato, Sweet
  • 3 tbs Coconut Ghee, Ripe
  • 4 crushed cloves of Garlic
  • 1 tbsp chopped Herb, Parsley
  • 1 tbsp Herb, Rosemary
  • Grated Parmesan Cheese (optional)
  • Seasoning


Bake the sweet potato at 180oC until soft. Cut into 2-inch slices and press gently with a fork. Drizzle the garlic coconut ghee and sprinkle with rosemary and parmesan cheese if you desire.  Bake for another 15 minutes.
