Pumpkin and Sage Gratin


  • 400g thinly sliced peeled Organic Potato
  • 1 small thinly sliced Organic Onion, Red
  • Garnish with Organic Rocket, Local (Arugula)


Preheat oven to 180?C. Lightly grease a baking dish. Layer one-quarter potato top with one-third pumpkin, onion and sage. Repeat layers, finishing with potato. Pour chicken stock over potato mixture. Sprinkle with breadcrumb mixture. Bake for 45 to 50 minutes or until potato is tender and breadcrumb mixture golden. Stand for 5 minutes. Serve.
