Quinoa Stuffed Capsicum

Quinoa Stuffed Capsicum

Ingredients:

  • 4 Capsicum Large, Mixed Colours
  • 1 1/2 tbsps Extra Virgin Olive Oil, Oro Del Desierto
  • 1 Onion, Red
  • 1 Chilli, Red
  • 1 Spinach
  • 2 cloves Garlic
  • 1 tin Chopped Tomatoes (Tinned), Biona
  • 1/4 cup Herb, Coriander

Preparation:

In a large pan, saut? the onions and then add the garlic. Add the chili and salt and pepper and continue to cook. Chop the spinach and add to the pan along with the pre-cooked quinoa and tin of tomatoes. Cook for approximately 5 minutes and then take off the heat and stir through the coriander. Fill the peppers with the mixture and bake in the oven for 25 minutes.
