- 250g Organic Tomato, Cherry
- 175g Organic Rocket, Local (Arugula)
Preparation:Preheat oven to 180?C/fan160?C/gas 4. Drizzle the cherry tomatoes with olive oil and roast for 12-15mins, until the tomatoes are just tender. Brush the steaks with oil and season. Heat a frying pan over a high heat until smoking. Add the steaks and cook for 2 -3 minutes each side remove and rest. Mix the mustard and balsamic vinegar together with the remaining olive oil. Spread the rocket leaves over plates. Slice each steak slightly on the diagonal and lift onto the rocket. Sprinkle over the dressing and scatter with parmesan shavings. Serve immediately with the roasted tomatoes.
