Warm Chicken Bean and Mushroom Salad

Ingredients:

  • 3cm piece Organic Ginger
  • 2cloves Organic Garlic

Preparation:

Place chicken, garlic and ginger into 2 ltrs of boiling water, simmer until chicken is cooked. Remove chicken and cool, keep stock in the pan at a simmer. To make the dressing add vinegar, soy sauce, sesame oil toasted sesame seeds and 60ml of stock. Heat 1 tbs peanut oil in a pan add brown mushrooms, cook until golden, repeat with oyster mushrooms. Thinly slice green beans and snow peas and add to the remaining stock, cook for 30 seconds. Slice the chicken and add to dressing with veggies.
