Zucchini and Cheese Tarts


  • 100g Organic Herb - Chives
  • 100g Organic Herb, Mint
  • 2 Organic Zucchini, Green
  • 1 cup Organic Rocket, Local (Arugula)


Preheat over to 190C. Roughly chop the herbs, remove 2 tbs & reserve. Add ricotta, 3 eggs and half of the parmesan to the remaining herbs. Season and blend until combined. Slice zucchinis and mix with seeds, 1 egg and parmesan. Cut haloumi into 1cm cubes. Brush 1 filo with oil, then place another on top. Repeat and place into lined baking tray. Cut Filo into smaller portions if desired. Divide ricotta mix among filo. Lift sides of filo upright around mix. Add zucchini mix and scatter with haloumi. Bake for 20 mins. Mix oil and lemon juice then season. Add rocket & herbs, toss. Serve on top.
