Asian Sesame Cucumber Salad

Ingredients:

  • 2 large Carrots
  • 2 Cucumber
  • 2 Tbsp Herb, Coriander
  • 1 Spring Onion
  • 2 tbsp Local Samar Honey, Ripe
  • 1 tbsp Lemon
  • 1/2 tbsp toasted Organic Sesame Seeds, Karmalize
  • 2 tbsp Brown Rice Vinegar, Clearspring
  • 1 tsp toasted Organic Sesame Oil, Emile Noel
  • 1 tsp Salt
  • 1 pinch Red pepper flakes

Preparation:

If you have a spiralizer, use to cut the cucumbers and carrots into long noodles, or you can slice them thinly with a knife. Place the cut cucumber into a strainer and toss with 1 tsp salt. Let the cucumber drain for 15-20 minutes to remove excess water. Meanwhile, in a small bowl whisk together the vinegar, lime juice, honey, sesame oil, red pepper flakes, and sesame seeds. Then, place the cucumber in a dish towel and gently pat out as much moisture as you can. Place the ”noodles” into a large bowl, and add 2-3 tbsp dressing to coat. Toss to combine, then garnish with additional sesame seeds, sliced spring onion, and fresh coriander. Serve immediately.
