Healthy Kick Quinoa Salad

Ingredients:

  • 2 Cups cooked White Quinoa, Ripe
  • 1 Peeled, pitted and diced Avocado
  • 1 Bunch fresh Herb, Parsley
  • 1 Bunch fresh Herb, Mint
  • 1 Cup fresh Spinach, Baby 100g
  • 1/2 Cup finely diced Broccoli, Florets
  • 1 Finely diced Cucumber
  • 2 Diced green Spring Onion
  • 1/2 Inch grated Ginger
  • 1 Tbsp Organic Sesame Seeds, Karmalize
  • 1 Tbsp Almonds, Ripe
  • 1 Tbsp Hazelnuts, Ripe
  • 1 Tbsp Matcha Powder, Ripe
  • 1 Tbsp freshly squeezed Lemon
  • 1 Tsp Extra Virgin Olive Oil Green Strings, Muraglia
  • 1/4 cup Ripe Coconut Flakes
  • Pinch of Sea Salt
  • Freshly ground Black Pepper

Preparation:

Add all the ingredients into a large bowl, drizzle with olive oil and lemon juice, season with salt and freshly ground black pepper, toss to combine and serve.

Serves:

2-3 people
