  • 200g Organic Tomato, Cherry


Preheat oven to 220?C. Process flour & butter into breadcrumbs. Add egg yolk & chilled water. Process until mix almost comes together, add extra water if needed. Place on a lightly floured surface. Knead until smooth. Place between 2 sheets of baking paper and roll out to form a 30cm round. Place on tray lined with baking paper. Refrigerate for 30 mins. Combine oil, garlic & herbs in a jug. Sprinkle parmesan over pastry, leave a 3cm border. Add tomatoes and spoon over oil mix. Fold pastry edge over filling. Brush pastry with egg. Bake until pastry is golden and crisp and toms tender. Sprinkle with basil.
