Fennel Stuffed Sweet Potato
Ingredients:
- 4 small Organic Potato, Sweet
Preparation:
Preheat oven 200?C. Cut sweet potato in _ lengthways. Place, cut-side up, on baking tray. Coat with olive oil. Bake for 35 to 40 mins. Heat oil in a pan. Add onion and fennel and cook until golden. Scoop soft sweet potato flesh into a bowl, leaving shell intact. Roughly mash sweet potato flesh. Add onion mixture, cottage cheese & basil. Season and mix until combined. Spoon mixture into potato shells. Sprinkle with breadcrumbs. Spray lightly with oil. Bake for 20 to 25 minutes or until light golden.Serves:
